“A Local, Organic, Christmas Dinner” Cooking Series at 21 Acres

The Sustainable Cooking at 21 Acres series introduces holiday cooking with locally sourced, farm fresh ingredients.

 

The inaugural cooking series, presented by 21 Acres, offers A Local, Organic, Christmas Dinner on Saturday, Dec. 17, at 11:00 a.m. in the new 21 Acres Center for Local Food and Sustainable Living. 

Taught by Darin Leonardson of Edibility, the Sustainable Cooking series introduces holiday cooking with locally sourced, farm fresh ingredients.  Chef Darin’s menu for the course includes spiced cranberry pear cider, hot Dungeness crab and shrimp dip, warm spinach salad with bacon and gorgonzola, simple winter roasted vegetables and chard, gremolata-crusted grass fed prime rib, thyme and roasted shallot mashed potatoes and stuffed baked apples with walnuts and cranberries.

Chef Darin strives to make his cooking experiences educational as well as enjoyable with the goal to inspire and educate kitchen cooks toward sustainable food purchases. With nearly 20 years of culinary experience at locations such as Google, The Bellevue Club Hotel, Bon Appetit, and Toscano, Darin Leonardson has a gift for creating epicurean harmony. The series continues with Sustainable Food & Wine Pairing 101, January 21, 2012.
