Bin On The Lake Hires New Chef, Dylan Giordan

Giordan most recently was head chef of the Seattle sister restaurants Serafina and Cicchetti.

 

, the upscale Kirkland wine bar at Carillon Point , has hired a new chef, Dylan Giordan, late of Serafina and Cicchetti in Seattle.

Giordan, known for his use of Northwest ingredients and strong background in wine, replaces Paul Hyman, who has moved on to Marjorie on Seattle's Capitol Hill.

“Chef Dylan is a mastermind at creating delicious fare from our region’s local ingredients and we look forward to the fresh inspiration he will bring to the bin on the lake menu,” John Murphy, general manager of the , said in a press release.

“Additionally, with his extensive travels through Italy and Spain, exploring the cuisine and viticulture of each region, he will be a great asset to the restaurant’s robust culinary and wine program.”

Giordan, a native of Harvard, Illinois, who moved to the Northwest in 2000, oversaw all aspects of the menus at the Serafina and its sister establishment Cicchetti, two well regarded Italian and Mediterranean restaurants.

He’ll lead the entire culinary team at bin and the direction of the restaurant.

“Eating is the best way to connect with people, and my favorite part about this profession is being able to create a community and camaraderie through thoughtfully prepared food,” Giordan said in the press release. “I’m looking forward to infusing a bit of my style with the current successes of bin on the lake to further establish that bond with our diners.”

Giordan is an active participant in many of Seattle’s charitable dining events, including YWCA Chefs Fest, Sunset Supper at Pike Place Market and March of Dimes Signature Chefs Auction. While not roasting his signature pork belly dish or joining in community events, Giordan’s favorite leisure activity is spending time with his two children, Sebastian and Sophia.

Bin, along with nearby Beach Cafe, is owned and operated by the Woodmark Hotel at Carillon Point.
