New Absinthe Still Fired Up by Woodinville's Pacific Distillery

Pacific Distillery makes Pacifique Absinthe Verte Supérieure, a premium variety of the anise-flavored beverage derived from botanicals and once banned in the United States.

Woodinville’s family-operated Pacific Distillery is making absinthe from a new still that is working better than expected, according to a post on its Facebook page.

Pacific makes Pacifique Absinthe Verte Supérieure, a premium variety of the highly alcoholic, anise-flavored beverage derived from botanicals – once banned in the U.S. – according to an 1855 French recipe.

Pacific posted on its Facebook page on Sunday:

“An update on our new absinthe still. It is working waaaay beyond our wildest expectations and is turning out some fantastic Pacifique Absinthe. The design of this still is allowing us to dig even deeper into herbs and pull out new depths of flavor. Maybe it's time to think about getting another one of these stills.”
