21 Acres: Venturing into the Kitchen- The Basics of Cooking Seasonally

all future chefs, food lovers and critics!

Acres, in partnership with the Venturing Program of the Boy Scouts of America
invites all interested young men and women ages 14-21 to participate in our
newest sustainable cooking basics series. If you have ever wondered how to
slice an onion without crying, transform your grains into mouthwatering
delicacies, or make the world’s fluffiest pancakes, then this class is for you!



In
a series of five two-hour classes, participants will learn the culinary basics,
including knife skills, soups & stocks, salads, grains, and proteins. All
classes will also incorporate lessons in sustainability, including how to eat
in season, locate local food, compost, and create weekly meal plans. At the end
of each class, students will sit down and share a scrumptious light meal
together.

Instructor:

Chef Brianna Paris first knew she wanted to cook for a living after taking the

culinary arts program at Bothell High School. Upon graduation, she enrolled at
Le Cordon Bleu in Seattle and quickly developed a passion to please others
through food. She now works at 21 Acres where she gets to do what she loves
everyday.

  • Wed. January,
    22nd: Bountiful breakfasts: Learn a few essential baking techniques while
    making pumpkin pancakes and homemade granola.
  • Wed, February 5th:
    Knife skills are important for anyone who cooks. Learn how to properly
    handle a variety of knives while preparing homemade pizza.
  • Wed, February 19th:
    Farro, quinoa and wheat berries galore! You will leave this class armed
    and ready to tackle even the toughest of grains.
  • Wed, March 5th:
    The weather may be getting colder outside, but inside things will be
    heating up as you learn to make these heart-warming dishes.
  • Wed, March 19th:
    Put those creative minds to work as you develop your own recipes featuring
    seasonal ingredients. Iron-Chef, anyone?



Venturing is a youth development program of the Boy Scouts of
America for young men and women who are 14 years of age OR 13 years of age and
have completed the eighth grade and under 21 years of age. Venturing's purpose
is to provide positive experiences to help young people mature and to prepare
them to become responsible and caring adult.

Note:


Class participants must be between 14-21 years of age (or 13
years of age and have completed eighth grade).
Registrants will be required to fill out a parental and photo
release agreement. An email will be sent to all participants containing these
documents. Please bring signed forms to first class January 22nd.
