21 Acres Cookbook Lovers Series: Foolproof Fish
Fresh Thinking: Cooking seasonally with sustainable ingredients sourced from local farms. Author Becky Selengut's Foolproof Fish Class and book signing of
her "Good Fish: Sustainable Seafood Recipes from the Pacific Coast" is offered as part of the new special series, "Cookbook Lovers," offered at the 21 Acres School. Instructors for each class will be well-known cookbook authors.
Menu/Recipes:
- Wild salmon chowder with fire-roasted tomatoes
- Halibut tacos with tequila-lime marinade and red cabbage slaw
- Mussels with apple cider and thyme glaze
- Grilled sockeye salmon with fennel two ways
Becky Selengut is a private chef, cooking teacher and food humorist who spent three years at the internationally acclaimed Herbfarm in Woodinville. She teaches at Bastyr University, writes for Edible Seattle and runs the colorful
blog ChefReinvented. "Good Fish: Sustainable Seafood Recipes from the Pacific Coast" is her second book and was named one of the best cookbooks of 2011 by Seattle Weekly.
