Woodinville Farmers Market Report: Raspberries

How about fresh raspberry pie for the 4th of July? The market will have the berries and has provided a recipe.

 

At some point, summer weather will arrive and when it does families minds will turn to the outdoors. Parks and natural areas will be filling up with picnickers. The Woodinville Farmers Market can help supply the ingredients for those picnics.

“Just imagine a fresh raspberry pie with a little dollop of ice cream consumed in the open air at the end of a fun filled day,” said Joe Scott, market board member.

To help inspire you, Scott has shared a family recipe, Uncle Ray’s Raspberry Pie. “Ray is my brother-in-law, and lives in Port Angeles. He has won many Clallam county fair blue ribbons for his pies,” Scott added.

Younquist Farms will be at the market with plenty of freshly-picked raspberries to sell.

The  is on 133rd Ave. NE, right beside City Hall. The farmers market is Saturdays, from 9 a.m. to 3 p.m. until Fall.

Uncle Ray’s Raspberry Pie

Uncle Ray’s Pie Crust

Ingredients for Crust

  • 2 cups flour – Gold Medal Unbleached
  • 2/3 cup + 2 tbs butter shortening (Crisco brand)
  • ½ -1 teaspoon salt
  • 2/3 cup cold water

Instructions for Crust

  • Cut flour and shortening into pea size chunks
  • Add salt
  • Add water
  • Roll into 2 equal balls (flour countertop first)
  • Add more water as required
  • Dust the balls in flour
  • Chill in fridge for ½-1 hr

Uncle Ray’s Raspberry Pie Filling

Ingredients for Filling - in a bowl, mix together

  • 4 cups raspberries
  • 1 cup sugar
  • ½ cup flour
  • pinch of salt
  • Instructions to construct Pie
  • Roll out chilled pie crust bottom and lay in pie pan
  • At the same time, roll out the top crust
  • Pour filling into pie plate/crust
  • Flake 1 tbs of butter on top of the pie filling
  • Add on top crust, and make a couple of cuts for venting (the pie taste better if you make a kitty face)

Bake @ 425 for 15 minutes (using 3 inch strips of aluminum foil), then @ 350 for 25 minutes
