21 Acres: Sustainable Cooking Series: A Taste of the Holidays

The test of a great chef is not what he can do with expensive and luxurious ingredients but what he can do with everyday produce to elevate it from good to amazing. Join us to watch a four course dinner being prepared by two of the rising stars of the Eastside chef scene and prepare to be entertained – and inspired. Whatever is fresh on the farm will be picked and transformed into gourmet dishes for you to sample throughout the evening along with some local wines. Our menu will include lots of local produce, sustainably- produced dairy products and perhaps some local rabbit or duck. The recipes will be easy to follow and reproduce at home and a sample menu might be Potato- Celeriac Soup, Roasted Squash and Kale Salad, Duck and Root Vegetable Hash and Apple Crisp with Anise Hyssop Chantilly but the chefs reserve the right to cook what looks freshest on the day.

Joshua Delgado’s father was a chef and he would watch him in the kitchen when he was very young and had no double about what he wanted to be when he grew up. He has worked in hotel kitchens since he was 16 and is now the chef de cuisine at the award-winning Barking Frog restaurant in Woodinville. Chris Feller graduated from the Culinary Institute of America in New York and worked at the Barking Frog restaurant before becoming the executive chef at the Wild Vine Bistro in Mill Creek.

Mr Delgado and Mr Feller love to support local growers, distillers, wine-makers, cheese-makers and farmers and together they have set up Kitchen Table, a catering and culinary events company that specializes in local, seasonal, and unbelievably delicious food.
