21 Acres: Beans and Greens

Fresh Thinking: Cooking seasonally with sustainable ingredients sourced from local farms. The Beans and Greens class is offered as part of the 21 Acres School.

There's one truth that all health professionals seem to agree on - eating more veggies is good for our health. Even if you are not a full-on vegetarian, you can benefit from upping your intake of whole grains, dark leafy greens, beans and legumes. Chef Lesa will shop the farmers market and have a range of different greens for you to sample and talk about.

Menu/Recipes:

  • Barley Risotto with Scarlet Runner Beans,
  • Greens and Goat Cheese
  • Arugula and Fingerling Potato Frittata Simply Sautéed Pea Vines with Garlic
  • Lentil, Hazelnut and Mushroom Pâté

Instructor, Lesa Sullivan graduated from Seattle Central Culinary Arts program in 1998. She runs her own personal chef business and is a chef instructor at several locations around the  Puget Sound. Ms. Sullivan cooks, teaches and writes about the foods and flavors of the Pacific Northwest with a native’s passion.

This on-going program at 21 Acres will feature culinary classes including the following themes: Cooking skills from raw ingredients; Meals from simple ingredients; Dinner parties and special events; Wine and food pairings; Outdoor grilling and pizza ovens; Special diets and allergy-free cooking; Raw food, vegetarian and vegan meals.
