21 Acres: Preserving Tomatoes

We’ve waited all year and now local tomatoes are at their peak, bursting with juice and flavor, and red all the way through. Delicous fresh, but preserved, these summer gems will brighten up our meals through the winter and into next spring. Learn the best ways to freeze and dry tomatoes and how to can them safely as juice and paste and in sauces. Learn which varieties we like best and take home some freshly canned jars for your pantry.

With Talk of Tomatoes food blogger, Master Food Preserver and urban homesteader Janelle Maiocco.
